The Milky Way

Creamy textured milk is the key to pouring perfect coffee. Once you have stretched and steamed your milk until you can no longer touch the jug, turn off the steam and wipe the wand. Then roll the milk in the jug, tapping firmly on the bench to release any air bubbles. The milk should then be smooth and shiny, with the texture of liquid cream. Keep the milk rotating in the jug until you pour, preventing the froth and liquid milk from separating. Pick up your espresso, tilt the cup toward the jug, getting the nib of the jug as close to the crema as possible. Now you are ready to pour...and watch the glorious patterns emerge.

Latte art... easier than you think
